Mizuna

Mizuna is a Japanese salad green that is also known as spider mustard, Japanese mustard greens, water greens, kyona etc. It has 16 varieties including Purple Mizuna,  Kyona Mizuna, and Mibuna Mizuna among others.


It is a common ingredient in salads either alone or in combination with other greens. It has mild, peppery flavor and is also used in making soups and as garnish & toppings.


Mizuna is a rich source of  vitamins A, C and K. It is also rich in antioxidants and phytochemicals.

Tatsoi

Tatsoi is also known as  spoon mustard. It has a creamy texture and is used as salad and as garnish and topping.

Komatsuna

Komatsuna is a Japanese leafy vegetable, also called Japanese Mustard Spinach. Its leaves are used in salad and stir-fry. It is also very popular for salt pickling.


Komatsuna is a fast-growing vegetable and is ready for harvest 35 days after sowing in warm climates.

Oba / Perilla

In Eastern medicine, Oba or Perilla, also known as Shiso is seen almost as a cure-all. The leaves are used fresh, salted, pickled, and dried in a variety of dishes, but especially rice. The seeds are rich in omega-3 fatty acids and can also be used fresh or dried.


Shiso is common in sushi restaurants. It is also widely used  in Japanese soups and noodle dishes. It is sometimes used as an ingredient in maki. It is also battered and fried as tempura

Purple Shiso

Purple Shiso is a common ingredient in sushi restaurants. It is also widely used  in Japanese soups and noodle dishes. It is sometimes used as an ingredient in maki. It is also battered and fried as tempura. It is more famous for its association with Japanese salt-pickled plums -umeboshi


The Japanese, love to use the red/purple shiso to color umeboshi and pickled ginger. Perilla seeds are an integral part of the famous seven spices of Japan, which originated more than 300 years ago in Kyoto.

Wasabi / Horseradish

According to Wikipedia,  Wasabi or Japanese horseradish is a plant of the Brassicaceae family, which also includes horseradish and mustard in other genera. A paste made from its ground rhizomes is used as a pungent condiment for sushi and other foods.
